This leads on from my last question. As I understand it 'reliquats azotés' means 'nitrate residue'...but I can't understand how 'reliquats' is being used in the following:
L’objectif des reliquats azotés est de connaître la qualité d’azote résiduel dans le sol qui sera disponible pour la culture à venir après la période hivernale.
Les reliquats sont donc réalisés à la sortie de l’hiver. Il y a 1 reliquat par exploitation et 1 pour 5 hectares.
Au total 165 reliquats sont réalisés chaque année en sortie d’hiver.

just a guess really. I know that commercial growers of fruit & veg have to have analyses carried out to determine the amount of nitrogen in the soil before the start of each growing season.

These links suggest that there might be a difference between two sense of your term. The thing seems to be that nitrogen washes into the soil during the winter, depending on how much rain there is. Farmers normally want to keep a certain level, so they plant winter cover, but I think you have the opposite situation.

Beginning in November of each year, the model will estimate the current amount of residual nitrate in field, providing guidance for the decision to perform the PPNT prior to planting the next spring.
