I know DLC is UBD (use-by date) but I'm not sure if the flora determines this date, restricts it or what.

Yes, the flora determines the UBD, because as long as it's alive, the dairy product (usually yogurt) is a live product ; its "life" can be extended artifically by killing the bacterial flora contained in it; but then it's no longer a "live product".

La DLC (date limite de consommation) est déterminée par le développement de la flore. DLUO : date limite d'utilisation optimale.
