Emirati Signature Dishes
Emirati cuisine relies heavily on the use of fish, meat and rice, with local dishes largely featuring a combination of these items. Some of the most popular authentic Emirati dishes are as follows:
A traditional Emirati Ouzi is a traditional dish, where a lamb with spicy rice is prepared to serve large crowds.
Al Harees is one of the most savoury dishes of the UAE kitchen and involves a lengthy preparation. Made mainly from meat and wheat, this is a prominent dish at special occasions, such as Ramadan, Eid and weddings. Al Harees is made by cooking ground wheat in a pot with a pinch of salt, to which the meat is then added.
Saloona is prepared by boiling meat with onions and then adding a variety of vegetables, such as zucchini, eggplant, onions, pepper, tomato and some okra.
Al Khabeesah is a dessert made from flour heated on a stove top; as the flour starts to turn brown, rose water, sugar, ghee and cardamom are added.

الأطباق الإماراتية المميزة
تعتمد المأكولات الإماراتية اعتماداً كبيراً على السمك واللحم والرز، فالكثير من أطباقنا المحلية تشمل توليفة من هذه العناصر. وفيما يلي بعض الأطباق الإماراتية الأكثر شعبية:
الأوزي طبق إماراتي تقليدي يحضر فيه لحم الضأن مع الأرز بالبهار ويقدم في المناسبات التي تضم حشداً كبيراً من الضيوف.
الهريس أحد ألذ الأطباق في المطبخ الإماراتي، ويتطلب تحضيره وقتاً طويلاً. ويحضر عادة من اللحم والقمح وهو طبق رئيس في عدد من المناسبات المميزة مثل رمضان والعيد وحفلات الزفاف. ولتحضير الهريس يطبخ القمح المجروش في وعاء مع حفنة من الملح ثم يضاف إليهما اللحم.
الصالونة: لتحضيرها يسلق اللحم مع البصل ثم تضاف تشكيلة من الخضار كالكوسا والباذنجان والبصل والفليفلة والبندورة والقليل من البامية.
الخبيصة وهي حلوى تحضر بتسخين الطحين على الموقد، وعندما يبدأ الطحين بالاحمرار يضاف إليه ماء الورد والسكر وحب الهال.
