Source text - English How to Make this Moment the Turning Point for Real Change
As millions of people across the country take to the streets and raise their voices in response to the killing of George Floyd and the ongoing problem of unequal justice, many people have reached out asking how we can sustain momentum to bring about real change.
Ultimately, it’s going to be up to a new generation of activists to shape strategies that best fit the times. But I believe there are some basic lessons to draw from past efforts that are worth remembering.
First, the waves of protests across the country represent a genuine and legitimate frustration over a decades-long failure to reform police practices and the broader criminal justice system in the United States. The overwhelming majority of participants have been peaceful, courageous, responsible, and inspiring. They deserve our respect and support, not condemnation — something that police in cities like Camden and Flint have commendably understood.
On the other hand, the small minority of folks who’ve resorted to violence in various forms, whether out of genuine anger or mere opportunism, are putting innocent people at risk, compounding the destruction of neighborhoods that are often already short on services and investment and detracting from the larger cause. I saw an elderly black woman being interviewed today in tears because the only grocery store in her neighborhood had been trashed. If history is any guide, that store may take years to come back. So let’s not excuse violence, or rationalize it, or participate in it. If we want our criminal justice system, and American society at large, to operate on a higher ethical code, then we have to model that code ourselves.
Second, I’ve heard some suggest that the recurrent problem of racial bias in our criminal justice system proves that only protests and direct action can bring about change, and that voting and participation in electoral politics is a waste of time. I couldn’t disagree more. The point of protest is to raise public awareness, to put a spotlight on injustice, and to make the powers that be uncomfortable; in fact, throughout American history, it’s often only been in response to protests and civil disobedience that the political system has even paid attention to marginalized communities. But eventually, aspirations have to be translated into specific laws and institutional practices — and in a democracy, that only happens when we elect government officials who are responsive to our demands.
Moreover, it’s important for us to understand which levels of government have the biggest impact on our criminal justice system and police practices. When we think about politics, a lot of us focus only on the presidency and the federal government. And yes, we should be fighting to make sure that we have a president, a Congress, a U.S. Justice Department, and a federal judiciary that actually recognize the ongoing, corrosive role that racism plays in our society and want to do something about it. But the elected officials who matter most in reforming police departments and the criminal justice system work at the state and local levels.
It’s mayors and county executives that appoint most police chiefs and negotiate collective bargaining agreements with police unions. It’s district attorneys and state’s attorneys that decide whether or not to investigate and ultimately charge those involved in police misconduct. Those are all elected positions. In some places, police review boards with the power to monitor police conduct are elected as well. Unfortunately, voter turnout in these local races is usually pitifully low, especially among young people — which makes no sense given the direct impact these offices have on social justice issues, not to mention the fact that who wins and who loses those seats is often determined by just a few thousand, or even a few hundred, votes.
So the bottom line is this: if we want to bring about real change, then the choice isn’t between protest and politics. We have to do both. We have to mobilize to raise awareness, and we have to organize and cast our ballots to make sure that we elect candidates who will act on reform.
Finally, the more specific we can make demands for criminal justice and police reform, the harder it will be for elected officials to just offer lip service to the cause and then fall back into business as usual once protests have gone away. The content of that reform agenda will be different for various communities. A big city may need one set of reforms; a rural community may need another. Some agencies will require wholesale rehabilitation; others should make minor improvements. Every law enforcement agency should have clear policies, including an independent body that conducts investigations of alleged misconduct. Tailoring reforms for each community will require local activists and organizations to do their research and educate fellow citizens in their community on what strategies work best.
But as a starting point, here’s a report and toolkit developed by the Leadership Conference on Civil and Human Rights and based on the work of the Task Force on 21st Century Policing that I formed when I was in the White House. And if you’re interested in taking concrete action, we’ve also created a dedicated site at the Obama Foundation to aggregate and direct you to useful resources and organizations who’ve been fighting the good fight at the local and national levels for years.
I recognize that these past few months have been hard and dispiriting — that the fear, sorrow, uncertainty, and hardship of a pandemic have been compounded by tragic reminders that prejudice and inequality still shape so much of American life. But watching the heightened activism of young people in recent weeks, of every race and every station, makes me hopeful. If, going forward, we can channel our justifiable anger into peaceful, sustained, and effective action, then this moment can be a real turning point in our nation’s long journey to live up to our highest ideals.

Learn to laminate and the world of layers opens up to you! I love making these croissants for their flaky, airy texture.
If you haven’t delved into much pastry work before, you’re probably a little confused right now…no, I’m not going to teach you the ins-and-outs of office supplies and home repair (although I’m sure my ignorance would be amusing there…). Lamination actually refers to the process of creating layers of dough and butter, as in puff pastry or croissants. Laminated doughs rise into those delicious, flaky treats we all know and love (and that makes gym memberships a thing).

It’s actually a simple technique to learn in many ways; it doesn’t require much special equipment and has few steps. The difficulty lies in the precision involved. Sometimes, the simplest techniques are the hardest to master because of their simplicity; they really don’t leave much room for error.

Now, I’m not saying this to scare you off; lamination just requires practice, and (most importantly) the correct mindset. What do I mean by “mindset”? Well, first I would recommend you read up on my essential tips for French pastry. That post deals partly with the philosophy behind pastry: you must be accurate, meticulous, and in many ways, a scientist (baking is basically food chemistry, anyways!). Every process has a reason in French pastry, and you have to make sure you know what each ingredient and step actually does (don’t worry, I’ll help you understand!).

What We’ll Cover
Today, we’ll cover a vital technique in any budding pastry chef’s repertoire: lamination! As I mentioned before, this is the process of creating flaky butter-dough layers; it’s the technique that’s used for puff pastry and croissants (aka, all those things you should probably avoid for your health but end up eating by the bushel).

I’m going to give you a step-by-step run-through of a basic laminated dough; now, as a forewarning, this is just the way I find easiest. It doesn’t mean that there aren’t other worthy techniques out there (so do your research, folks; what works for me might not be exactly what works for you!). However, I aim to make this technique as clear, easy, and successful for you as possible. By the end of this post, you should be armed with the tools, knowledge, and confidence to make an excellent croissant (or any other flaky pastry!).

Kouign amann can be described as a salted caramel croissant cake–it’s as delicious as it sounds (and…surprise…it requires lamination!).
And don’t worry if you make some mistakes in the first few go-arounds; everything takes practice, especially the highly-technical (but fulfilling!) art of French pastry. Before I opened my macaron shop, I worked at a Bread bakery where I trained many employees to make croissants and how laminate. Many were complete beginners to French pastry as a whole, but the ones who persevered and paid attention to detail still did well. So it doesn’t matter if you come from no experience, I’ll help de-mystify French pastry technique for you (it’s delicious work) 🙂

Tips Before You Start
Make sure everything is COLD. Keeping things cold will help the butter not melt; if the butter gets too soft it will start seeping into the dough layer which will prevent the layers from rising correctly. Furthermore, the butter could potentially run out of the dough when the pastry is baked (that would be a big problem!). To keep things cold, make sure you use butter straight from the fridge and that your dough is adequately chilled (overnight refrigeration is recommended). In addition, if the dough feels too warm and soft as you work it during lamination, feel free to place it in the fridge to rest for 20 or 30 minutes before continuing. A Tip for Beginners: Choose a cooler day the first time you laminate; it will eliminate some immediate stresses concerning temperature!
Use a French rolling pin! I cover the most important pieces of equipment to have for French pastry in this article, for those of you who are extra-curious about why I’m so adamant about using a French rolling pin 🙂 The gist lies in its shape and how it’s controlled when laminating doughs: those tapered edges make it easier to pinpoint the areas you want to lengthen. It helps to roll out an even rectangle shape as well (which is what we’ll need to do for lamination), as you can adjust the side lengths more accurately with a tapered pin. Plus, you look super professional and French using one (hey, you gotta look the part to act the part, okay).
European Butter is a must: Not only does European butter (such as Plugra or President) provide more accurate croissant flavor (French butter is usually a cultured butter!), it’s also critical for the technical composition of a croissant. American butter is lower in fat content than European butter (for once, America is actually the diet-conscious one…who would have thought?); for reference, American butters are usually around 80% butter fat whereas European butters are generally between 82% and 84% butter fat. Why is this important? It’s partly because this higher fat content stops the butter from breaking as much during lamination (European butter is much more “bendy”; try bending a stick of American butter and you’ll probably break it in half). This makes it easier to create even butter-dough layers. In addition, that honeycomb profile you find in croissants (with all those tiny pockets) are created as the water in the butter steams; if the water content isn’t accurate, you won’t get the correct texture. Now, I’m not saying a croissant with American butter will fail; however, it will never be as good. Furthermore, American butter is MUCH harder to work with if you’re new to lamination. So just buy the good stuff 🙂
Exercise restraint when it comes to flour power: laminated doughs rely on getting those perfectly even, alternating layers of butter-dough. If you add too much flour when lengthening the dough out during lamination, you could create some layers too thick. Additionally, flour will toughen up the dough and make the final pastry less delicate, flaky, and (ultimately) delicious. I recommend using minimal amounts of flour when rolling the dough out, and turning the dough 180 degrees often so it doesn’t stick too much, only adding extra flour to the counter if you start to feel a lot of sticking. Just remember the first tip: things should be cold! So if things are sticking, the solution is probably the fridge and not more flour (sorry flour worshipers…I know you guys exist…somewhere…). Brushing flour off the dough (with a pastry brush or just your hands) before folding is also a great habit to form!
Step-by-Step Guide
To start the lamination process, we’ll need two things: butter and dough. What follows is really actually a simple concept: we’re just making layers alternating between butter and dough. A successful lamination relies on creating even, discrete layers; as the pastry bakes, the water content in butter will release steam into the dough, allowing it to rise and create those beautiful pockets of airy deliciousness 🙂
1. First, we’ll make the butter block (this will be sealed inside of the dough). You want to make sure you use cold butter (see my tips above! That’s an order…), as we don’t want anything melting into the dough and hurting our flaky pastry layers. To make the butter block, take the butter called for in the recipe and cut it, length-wise, with even thickness across (I usually aim for about 1/2 inch thick).
2. You’ll want to form a square from the butter (it’s okay if it’s slightly rectangular; the precise measurements will come into play a little later). I like to do this part on a sheet of parchment or wax paper, as it helps the butter not stick to the counter or the rolling pin.

The mighty butter block! As you can see, I’ve put the some extra butter (to total the amount I needed for the recipe) on top to keep the square shape even. It’ll all get combined in the end, so you can do that 🙂
3. Once you make the square, set another sheet of parchment on top of the butter. You’ll then want to pound out the butter block (yes, I said pound! Quick note: pounding instead of rolling will help the butter spread without melting or softening too much) until there are no seams left and the thickness has gone down to about 1/4 inch. Laminated doughs are definitely a great thing to do when you have some unresolved anger issues…all that pounding is sure to make you feel better 🙂

4. When the butter block has been pounded down with no seams, take the top sheet of parchment off and cut off the uneven edges to make an exact square. I recommend using a ruler to check (it might sound over-the-top, but making sure things are precise will help the layers turn out even. It also helps form the straight outer edges of the rectangle we’ll be rolling out shortly.) Place those uneven pieces back on top of the butter square (focusing more on the center).

5. Now, pound lightly (so the outer edges of the square you cut so nicely are rustled too much) until the pieces are joined with the butter square evenly. If the edges of the square got slightly misshapen, you can use your hands to push them (carefully) straighter (however, if the edges are dramatically off, you’ll probably have to do the whole cutting and pounding process one more time). To check if the butter is pliable, try bending the butter square on the side of a counter or table. If it bends without breaking or squishing, it’s ready.

6. Take out your chilled dough (for croissants or puff pastry, for example; I love using this croissant dough recipe, but feel free to find your own!) and place it on a lightly floured counter. I recommend punching your dough into a disk before chilling it, as it makes this next rolling/pounding section much easier.

7. Use your rolling pin to pound the dough into a square slightly larger than your butter block. It has to be large enough that the butter block can fully be encased in it. I like to use a technique of pounding the center of the dough (to get it warm and activate the gluten), and then rolling out the corners into a square.

8. Once you’ve made a square from the dough, place the butter block on top of the dough square. You’ll want to place the butter with the corners facing you (like a diamond), offset from the corners of the dough square.

9. Fold up the dough around the square, making sure there’s no space between the dough and the butter (this will help prevent air bubbles when laminating). Do this by pulling the corners of the dough to the center of the butter block, allowing them to join (with no butter showing) in the center. It’s like a present, just filled with butter (maybe a health risk, but probably a unique gift; you should try it this holiday season…okay, maybe that’s bad advice…).

10. Place the butter-dough square seam-side down on your (lightly floured) workspace. Now, we’re going to start the actual lamination (I warned you French pastry was detailed!). You’re going to want to lengthen the dough to a long rectangle, without affecting the width as much as possible; the thickness should be between 1/4 and 1/8 inch thick at the end (you’re looking for thin, but not see-through, dough).

11. In order to lengthen the dough as quickly as possible without warming it up too much (remember, things have to remain cold), use your rolling pin to pound on the dough, and then roll it clean (so those pounding indents are smooth). In the beginning, it will be mostly pounding, but as you get the rectangle longer, there will be more rolling. An important note: ALWAYS roll and pound AWAY from your body and with the dough sitting vertically in front of you; this will stop the dough from folding into itself (a big no-no!) and allow you to get the correct pressure from the rolling pin.

12. As you’re lengthening the rectangle, make sure the edges stay straight (and not curved); you want a clean rectangular shape. I find that it helps to just roll the rolling pin on the side up to the corner you want to fix (this is where that French rolling pin is superior).

The final rectangle will be reasonably thin, about 1/4 to 1/8 inch thick.
13. If at any point the butter starts poking through the dough, sprinkle some flour on the sticky spot and (very lightly) roll it in. I would recommend placing the dough in the fridge to rest then for 15-20 minutes to help it get cold again (this will stop the butter from sticking as much). Also make sure to clean off any butter from your rolling pin, as this can tear new holes in the dough. NOTE: Another way to avoid sticking is to turn the dough 180 degrees every so often so that it doesn’t get too comfortable (and stick) in one position. .
14. Once you’ve created your rectangle, turn it horizontally in front of you. We’re now going to get rid of any “dead dough.” This refers to the parts of the dough where no butter got to; they’ll be at the ends. I like to press down on the ends with my finger and see if I can find or feel any butter. If I do, it’s good–If I don’t feel any, then I have to cut off a thin strip of dough at the end until I find the butter. This is easier to feel the colder the butter is; as a beginner, you might have the butter soften up more if you’re a bit slower. In that case, I would just recommend cutting off a thin strip of dough across the ends anyways and seeing if you’ve hit any butter. You can actually use this dead dough for another laminated dough of the same type (just adding the dead dough to the other dough). It’s a trick used by a lot of bakeries 🙂

15. After cutting off the dead dough, we’re going to do something called a “bookfold.” Now, there’s a few different folding techniques out there, but this one is the simplest and most commonly used. To do a bookfold, you’ll want to take one end of the dough and fold it on top of the rest of the dough 2/3 of the way across. Brush off any excess flour from the top of that fold and then take the other end and fold it on top. Make sure that there is no space in the folds and that the top fold comes to the edge of the dough; every part of the dough should have the same amount of folds.

16. Place the dough in the fridge for 15-20 minutes and then repeat the laminating process (lengthening the dough into a rectangle and folding; don’t remake the butter block!!!). A croissant dough will generally have three bookfolds (to make 27 layers); puff pastry will typically have six bookfolds (729 layers…it’s flaky stuff!). There are some ways to speed up the process, such as with double bookfolds; however, if you’re new to lamination I would stick with the slower way. It might be more time-consuming, but you have infinitely more chances for success. Patience is definitely a virtue in French pastry 🙂

Se você não se aprofundou em pastelaria antes, você provavelmente está um pouco confuso agora... Não, eu não vou te ensinar as entre-linhas dos materiais de escritório e da manutenção de casas (apesar de que eu tenho certeza que minha ignorância nesse assunto seria engraçada...). Laminação na verdade se refere ao processo de criar camadas de massa e manteiga, assim como na massa folhada ou no croissant. As massas laminadas viram essas deliciosas guloseimas cheias de casquinhas crocantes que nós conhecemos e amamos (e que faz com que a mensalidade da academia seja importante).

Fazer massa laminada requer muitas dobras. Essas camadas não se fazem sozinhas!
Laminação é, na verdade, uma técnica simples para se aprender de várias formas: não requer muitos equipamentos especiais e tem poucos passos. A dificuldade está na precisão envolvida. Geralmente, as técnicas mais simples são as mais difíceis de aprender por causa da sua simplicidade: ela não deixa muito espaço para erros.
Agora, eu não estou falando isso para assustar você: a laminação apenas requer prática e (o mais importante) a mentalidade correta. O que eu quero dizer com mentalidade? Bom, primeiro eu recomendaria para você dar uma olhada no meu texto “dicas essenciais para pastelaria francesa”. Esse texto lida parcialmente com a filosofia por trás da pastelaria: você tem que ser preciso, meticuloso e, de várias formas, um cientista (afinal, cozinhar é basicamente química de comida!). O Que Vamos Tratar
Hoje nós vamos tratar de uma técnica vital em qualquer repertório de chefe de pastelaria que está começando: laminação! Como eu falei anteriormente, esse é o process de criar finas e crocantes camadas de massa e manteiga: é a técnica usada para massa folhada e croissant (também conhecidos como "todas aquelas coisas que você provavelmente deveria evitar para sua saúde mas acaba comendo aos montes").

Eu vou dar para você um passo a passo do começo ao fim sobre uma massa laminada básica: agora, como um aviso prévio, isso é apenas a maneira que eu acho mais fácil. Isso não significa que não existam outras técnicas valiosas por aí (então façam sua pesquisa, amigos: o que funciona para mim talvez não seja exatamente o que vai funcionar para vocês!). Porém, eu pretendo fazer essa técnica o mais clara, fácil e bem sucedida possível para você. Ao fim desse post, você deverá estar equipado com as ferramentas, conhecimentos e confiança para fazer um excelente croissant (ou qualquer outra massa folhada!).

Kouign Amann pode ser descrito como um bolinho de massa de croissant de caramelo com sal - é tão delicioso quanto parece (e... surpresa... requer laminação!).
E não se preocupe se você faz alguns erros nas primeiras tentativas: tudo exige prática, especialmente a altamente técnica (porém realizadora) arte da pastelaria francesa. Antes de eu abrir minha loja de Macaron, eu trabalhei na Bread Bakery, onde eu treinei muitos empregados para fazerem croissant e como laminar. Muitos eram totalmente iniciantes na pastelaria francesa como um todo, porém os que perseveraram e prestaram atenção aos detalhes conseguiram bons resultados. Então não importa se você não tem experiência, eu vou te ajudar a desmistificar a técnica da pastelaria francesa (que é um trabalho delicioso).

Dicas antes de Começar
Tenha Certeza de que Tudo Está Gelado.
Manter tudo gelado vai ajudar a não derreter a manteiga: se a manteiga derrete ela fica muito macia e vai começar a vazar entre as camadas de massa, o que vai prevenir que elas cresçam corretamente. Além disso, a manteiga pode vazar da massa quando cozinhar (o que seria um grande problema!). Para manter tudo gelado, confira se você usará a manteiga direto da geladeira e se sua massa está devidamente resfriada (deixar a massa na geladeira a noite inteira é recomendado). Também, se a massa parece estar muito quente e macia enquanto você trabalha na laminação, sinta se à vontade para colocá-la na geladeira para descansar por 20 ou 30 minutos antes de continuar.
Uma Dica para Iniciantes: escolha um dia frio para sua primeira tentativa de laminação: isso vai eliminar preocupações com a temperatura!
Use um rolo francês!
Eu abordei os equipamentos mais importantes para pastelaria francesa nesse artigo (aqui tem um hipertexto que leva para outro post) para aqueles que estão mais que curiosos para saber o motivo de eu ser mais que rígida sobre o uso de um rolo francês. A essência está no seu formato (mais arredondado nas pontas, ao invés de um cilindro reto como os normais) e no como se comporta enquanto lamina massas: os com pontas arredondadas fazem com que seja mais fácil ver as áreas que você quer alongar. Isso ajuda a desenvolver um retângulo bem regular (que é o que você vai precisar fazer para laminar), já que você pode ajustar o tamanho das laterais de forma mais precisa com uma ponta arredondada. E também, você vai ficar parecendo muito profissional e francês usando um (você precisa parecer com um para ser um, certo?).
Manteiga Européia é Importante:
Não apenas as manteigas europeias (assim como Plugra ou President) trazem um sabor de croissant mais preciso (manteigas francesas geralmente são manteigas fermentadas!), mas também são críticas para a composição técnica de um croissant. Manteigas americanas possuem menos gordura do que as europeias (ao menos dessa vez a americana é a mais ideal com relação à dieta... quem diria né?): para comparação, as americanas geralmente possuem por volta de 80% de gordura enquanto as europeias possuem algo entre 82% e 84% de gordura. Porque isso é importante? Parcialmente é porque essa porcentagem maior de gordura previne que a manteiga quebre muito durante a laminação (a européia é mais dobrável: tente dobrar uma barra de manteiga americana e você provavelmente vai quebrá-la no meio). Isso faz com que seja mais fácil criar camadas regulares de massa e manteiga. Além disso, aquele padrão de colmeia que você vê no interior do croissant (com todas aquelas pequenas bolsas de ar) são criados conforme a água na manteiga evapora: se a quantidade de água não for precisa, você não terá a textura correta. Agora, eu não estou falando que um croissant com manteiga americana vai dar errado: entretanto, não vai ser tão bom. Além disso tudo, a manteiga americana é muito mais difícil de trabalhar se você é um novato na laminação. Então, apenas vá e compre a de qualidade.
Limite do trabalho com a massa quando se trata da força da farinha.
Massas laminadas dependem de conseguir aquelas perfeitamente regulares e alternadas camadas de massa e manteiga. Se você adiciona muita farinha quando está esticando a massa durante a laminação, você pode criar algumas camadas muito grossas. Também, a farinha vai endurecer a massa e fazer com que a massa final seja menos delicada, com menos casquinhas delicadas e (o mais importante) menos deliciosa. Eu recomendo usar o mínimo possível de farinha enquanto estiver esticando a massa e girar a massa 180º graus frequentemente para que não grude muito, apenas adicionando mais farinha na mesa quando você começar a sentir que a massa está muito grudenta. Apenas lembre-se da primeira dica: tudo tem que estar gelado! Então, se a massa estiver grudenta, a solução é provavelmente a geladeira e não mais farinha (desculpa adoradores da farinha... Eu sei que vocês existem... Em algum lugar...). Pincelar farinha para fora da massa (com um pincel para pastelaria ou apenas suas mãos) antes de dobrar é também um excelente hábito a se ter!
Guia Passo-a-Passo
Para começar o processo de laminação, você vai precisar de duas coisas: manteiga e massa. O que se segue é um conceito bem simples: nós vamos apenas fazendo camadas alternando entre massa e manteiga. Uma laminação de sucesso depende de criar camadas regulares e discretas: conforme a massa cozinha, a água da manteiga vai evaporando, permitindo que a massa cresça e que ela crie aquelas belíssimas delícias aeradas.
Primeiro, nós vamos fazer o bloco de manteiga (isso vai ser selado dentro da massa). Você quer ter certeza que você vai usar manteiga gelada (veja minhas dicas acima! É uma ordem...), já que nós não queremos nada derretendo na massa e ferindo nossas camadas de pastelaria cheia de casquinhas crocantes. Para fazer o bloco de manteiga, pegue a manteiga necessária para a receita e corte-a, longitudinalmente, com uma grossura regular (eu geralmente busco algo em torno de meia polegada).
Você quer formar um quadrado da manteiga (está tudo bem se está um pouco retangular: as medidas exatas virão um pouco mais a frente). Eu gosto de fazer essa parte numa folha de papel manteiga, já que isso ajuda a manteiga a não grudar no balcão ou no rolo. (Imagem) O todo poderoso bloco de manteiga! Como você pode ver, eu coloquei um pouco de manteiga a mais (do total requerido para a receita) em cima para manter o formato de quadrado mais regular. Vai tudo se misturar no final, então você pode fazer isso.
Uma vez que você tenha feito o quadrado, pegue outra folha de papel manteiga e coloque em cima da manteiga. Você vai então bater no bloco de manteiga (sim, eu falei bater! Nota rápida: bater ao invés de rolar vai ajudar a manteiga a se espalhar sem derreter ou ficar muito macia) até que os pedaços de manteiga estejam totalmente misturados em um só e que a grossura do bloco tenha chegado a algo em torno de 1/4 de polegada. Massas laminadas são definitivamente uma coisa excelente para fazer quando você tem alguns rancores guardados... Toda essa “bateção” vai fazer com que você se sinta melhor. (Imagem) O quadrado de manteiga foi batido perfeitamente. As pontas podem parecer um pouco irregulares como essas - nós vamos arrumar isso já já.
Quando o bloco de manteiga for batido sem até virar um só, tire o papel de cima e corte as bordas irregulares para fazer um quadrado perfeito. Eu recomendo usar uma régua para conferir (pode soar um pouco exagerado, mas ter certeza de que tudo está perfeito vai ajudar a termos camadas perfeitas. E também isso vai ajudar a formar laterais retas que nós vamos esticar daqui a pouco.) Coloque esses pedaços irregulares cortados de volta na parte de cima do quadrado (foque mais no centro). (Imagem) Eu cortei as pontas irregulares e coloquei os restos na parte de cima do quadrado.
Agora bata levemente (para que as pontas do quadrado que você cortou tão precisamente não se deforme muito) até que os pedaços estejam misturados com o quadrado de manteiga. Se as laterais do quadrado estiverem um pouco tortas, você pode usar suas mãos para empurrar elas (gentilmente) até endireitá-las (apesar de que se as laterais estiverem muito irregulares, você provavelmente vai ter que cortar e bater mais uma vez). Para conferir se a manteiga está flexível, tente dobrar o quadrado de manteiga na ponta da mesa ou do balcão. Se dobrar sem quebrar ou vazar, está pronto. (Imagem) Eu estou dobrando o bloco de manteiga contra a borda da mesa aqui - não está quebrando e parece flexível, então estamos prontos para começar! (Imagem) O bloco final de manteiga. Nós estamos prontos para a laminação.
Tire sua massa resfriada (para croissant ou massa folhada, por exemplo: eu amo usar essa receita de massa de croissant, porém sinta-se a vontade para encontrar a sua própria receita!) e coloque-a numa mesa levemente enfarinhada. Eu recomendo abrir sua massa em um disco antes de resfriar ela, já que isso faz com que a próxima vez que você usar o rolo seja muito mais fácil. (Imagem) Essa massa de croissant ficou a noite inteira crescendo na geladeira: eu deixei ela crescer nesse formado de disco para fazer com que seja mais fácil abrir ela agora.
Use seu rolo para abrir a massa em um quadrado um pouco maior que seu bloco de manteiga. Tem que ser grande o bastante para que o bloco de manteiga possa ser completamente coberto dentro da massa. Eu gosto de usar uma técnica de bater no centro da massa (para fazer com que fique mais quente e ativar o gluten) e então abrir os cantos no formato de um quadrado. (Imagem) Esse quadrado está pronto para a manteiga! Tente manter o formato geral bem quadrado e evite ficar muito circular.
Uma vez que você tenha feito um quadrado com a massa, coloque o bloco de manteiga em cima da massa quadrada. Você vai querer colocar a manteiga com as pontas viradas para você (como um diamante), longe das pontas da massa quadrada. (Imagem) Eu coloquei a manteiga com as pontas na minha direção.
Dobre a massa para cima do quadrado de manteiga, conferindo para que não tenha espaços entre a massa e a manteiga (isso vai prevenir bolhas de ar durante a laminação). Faça isso puxando as pontas da massa para o centro do bloco de manteiga, permitindo que juntem-se (sem nenhuma manteiga à vista) no centro. É como um presente, porém recheado de manteiga (talvez com um risco de ataque cardíaco, um presente único no entanto: você devia tentar dar um presente desses nesse próximo feriado... certo, talvez esse seja um conselho terrível...). Coloque o lado onde está a junção das pontas da massa para baixo na sua (levemente enfarinhada) mesa. Agora, você vai começar a laminação em si (eu te avisei que pastelaria francesa era detalhada!). Você vai esticar a massa para um retângulo comprido, sem afetar a largura o máximo possível: a grossura deve ser algo entre 1/4 e 1/18 de polegada no final (você está visando por uma massa fina, porém não a ponto de ser transparente). (Imagem) Coloque o lado com as pontas da massa para baixo antes de esticar a massa.
Para esticar a massa o mais rápido possível sem aquecer muito ela (lembre-se, tudo tem que estar resfriado), use o seu rolo para bater na massa e então rolar ela para que fique regular (para que as ondulações criadas ao bater fiquem retas). No começo você vai bater mais, porém conforme você obtém o formato retangular mais comprido, você vai rolar mais. Uma observação importante: SEMPRE role e bata começando perto do seu corpo e indo para longe com a massa verticalmente em relação a você: isso vai prevenir que a massa forme uma dobra sobre si mesma (um grande erro!) e vai permitir que você consiga a correta pressão no rolo. (Imagem) Esse retângulo não está longo o suficiente ainda, mas está chegando perto.
Conforme você aumenta o comprimento do retângulo, certifique-se que as laterias mantenham-se retas (e não curvadas): você quer um perfeito formato de retângulo. Eu acredito que isso ajuda a rolar o rolo para os cantos que você quer arrumar (aqui é onde o rolo francês é superior). (Imagem) Esse retângulo agora é comprido o suficiente. Tente manter os lados bem retos. (Imagem) O retângulo final vai ser razoavelmente fino, cerca de 1/4 até 1/8 polegadas de grossura.
Se a qualquer momento a manteiga começar a vazar através da massa, jogue um pouco de massa no lugar grudando e (bem levemente) role por cima. Eu recomendaria colocar a massa na geladeira para descansar por 15 a 20 minutos para ajudar a ficar gelada novamente (isso vai impedir a manteiga de grudar muito). Além disso, certifique-se de limpar qualquer manteiga do seu rolo, já que isso pode criar novos buracos na massa. OBSERVAÇÃO: outra forma de evitar grudar é virar a massa 180º de vez em quando para que ela não fique muito grudada numa mesma posição.
Uma vez que você tenha criado seu retângulo, vire-o horizontalmente de frente para você. Nós vamos agora tirar qualquer excesso de massa. Isso se refere àquelas partes da massa onde não tem manteiga: essas partes estarão nas extremidades. Eu gosto de apertar nas extremidades com meu dedo e ver se eu consigo achar ou sentir manteiga. Se eu consigo, é algo bom - se eu não consigo, então eu tenho que cortar fora uma pequena parte da massa no final até que eu encontre a manteiga. Isso é fácil de sentir o quanto mais frio estiver a manteiga: como um iniciante, você talvez tenha deixado a manteiga amaciar mais se você foi um pouco mais devagar. Nesse caso, eu gostaria apenas de recomendar cortar fora uma fina linha da massa nas extremidades e ver se você alcançou alguma manteiga. Existem algumas técnicas diferentes de dobra por aí, porém essa é a mais simples e mais comumente utilizada. Para fazer um bookfold, você vai prcisar pegar uma das extremidades da massa e dobrar sobre ela mesmo até 2/3 do caminho até o final. Tire qualquer excesso de farinho do topo da dobra e então pegue a outra extremidade e dobre por cima da primeira dobra. Certifique-se que não existem espaços entre as dobras e que a dobra de cima vá até a outra extremidade da massa: cada parte da massa tem que ter o mesmo número de camadas. (Imagem) Começando a primeira parte da dobra. (Imagem) Tudo dobrado! Certifique-se de trazer a ponta da última dobra até cobrir por completo a primeira dobra.
Coloque a massa na geladeira por 15 a 20 minutos e então repita o processo de laminação (esticando a massa em um retângulo e dobrando: não refaça o bloco de manteiga!!!). Uma massa de croissant vai ter geralmente três bookfolds (para possuir 27 camadas): massa folhada vai ter por volta de seis bookfolds (729 camadas... é algo cheio de floquinhos crocantes!). Tem alguns jeitos de aumentar a velocidade do processo, como o duplo bookfold: porém, se você é iniciante na laminação, eu recomendaria ir do jeito lento. Vai exigir mais tempo, porém você vai ter infinitamente mais changes de sucesso. Paciência é definitivamente uma virtude na pastelaria francesa. Translation note: the main challenge here was the term "flaky", there is no such term on portuguese as an adjective ("floco" is a noun and there isn't an adjective version of it), so the closest translation I could come up was to describe it with words like "casquinhas", "flocos", "crocante" as french croissants are mostly known for the crack sound they made when we bit them.
