Source text - English Food business operators shall put into place, implement and maintain a permanent procedure or procedures based on the principles of HACCP.
The HACCP seven principles are:
- Principle 1: Conduct a hazard analysis. - Plans determine the food safety hazards and identify the preventive measures the plan can apply to control these hazards. A food safety hazard is any biological, chemical, or physical property that may cause a food to be unsafe for human consumption.
- Principle 2: Identify critical control points. - A Critical Control Point (CCP) is a point, step, or procedure in a food manufacturing process at which control can be applied and, as a result, a food safety hazard can be prevented, eliminated, or reduced to an acceptable level.
- Principle 3: Establish critical limits for each critical control point. - A critical limit is the maximum or minimum value to which a physical, biological, or chemical hazard must be controlled at a critical control point to prevent, eliminate, or reduce to an acceptable level.
- Principle 4: Establish critical control point monitoring requirements. - Monitoring activities are necessary to ensure that the process is under control at each critical control point.
Note: Each monitoring procedure and its frequency should be listed in the HACCP plan.
- Principle 5: Establish corrective actions. - These are actions to be taken when monitoring indicates a deviation from an established critical limit. The final rule requires a plant's HACCP plan to identify the corrective actions to be taken if a critical limit is not met. Corrective actions are intended to ensure that no product injurious to health or otherwise adulterated as a result of the deviation enters commerce.
- Principle 6: Establish record keeping procedures. - The HACCP regulation requires that all plants maintain certain documents, including its hazard analysis and written HACCP plan, and records documenting the monitoring of critical control points, critical limits, verification activities, and the handling of processing deviations.
- Principle 7: Establish procedures for ensuring the HACCP system is working as intended. - Validation ensures that the plants do what they were designed to do; that is, they are successful in ensuring the production of a safe product. Plants are required to validate their own HACCP plans.
Note: Verification ensures the HACCP plan is adequate, that is, working as intended. Verification procedures may include such activities as review of HACCP plans, CCP records, critical limits and microbial sampling and analysis.
Verification also includes 'validation' - the process of finding evidence for the accuracy of the HACCP system (e.g. scientific evidence for critical limitations).

Los siete principios del sistema de APPCC son los siguientes:
- Principio 1: realizar un análisis de peligros. Se debe realizar un plan que identifique los peligros para la inocuidad de los alimentos y determine las medidas preventivas que se pueden aplicar para controlar dichos peligros. Se entiende como un peligro para la inocuidad de los alimentos cualquier propiedad biológica, química o física debida a la cual un alimento deja de ser seguro para el consumo humano.
- Principio 2: determinar los puntos críticos de control. Un Punto Crítico de Control (PCC) es una fase o procedimiento dentro de un proceso de elaboración de alimentos en el cual se puede aplicar un control específico con el objeto de evitar, eliminar o reducir a niveles aceptables cualquier peligro para la inocuidad de los alimentos.
- Principio 3: establecer límites críticos para cada punto crítico de control. Un límite crítico es el valor máximo o mínimo por encima o por debajo del cual, respectivamente, se debe controlar en un punto crítico de control cualquier peligro físico, biológico o químico con el fin de evitarlo, eliminarlo o reducirlo a niveles aceptables.
- Principio 4: establecer una serie de reglas para vigilar los puntos críticos de control. La vigilancia resulta indispensable para asegurar que el proceso se encuentra controlado en cada uno de los puntos críticos de control.
Nota: cada procedimiento de vigilancia y su frecuencia debe figurar en el plan de APPCC.
- Principio 5: establecer medidas correctivas. Son las medidas que se deben adoptar cuando la vigilancia indica que se ha producido una desviación respecto de un límite crítico establecido. La norma final obligará que una sección del plan de APPCC determine las medidas correctivas que se deben tomar si no se ha cumplido con un límite crítico determinado. El objetivo de las medidas correctivas consiste en asegurar que no se comercialicen productos perjudiciales para la salud o cuyas propiedades hayan sido adulteradas como consecuencia de una desviación.
- Principio 6: establecer procedimientos para el registro. El reglamento del sistema de APPCC estipula que todas las secciones deben estar en posesión de ciertos documentos, incluidos los análisis de peligros y el plan de APPCC, así como llevar un registro que documente la vigilancia de los puntos críticos de control, los límites críticos, las acciones de verificación y el tratamiento de desviaciones en el proceso.
- Principio 7: establecer procedimientos que garanticen un adecuado funcionamiento del sistema de APPCC. Esta validación asegura que cada sección cumple con el objetivo para el cual fue diseñada, es decir, que garantiza la salubridad de los productos alimenticios. Cada sección es responsable de validar sus propios planes de APPCC.
Nota: la verificación garantiza que el plan de APPCC es adecuado, es decir, que cumple con las funciones y objetivos previstos.
Actividades tales como la revisión de los planes de APPCC, el registro de PCC, límites críticos y muestras microbianas, y los análisis constituyen procedimientos de verificación.
Dentro de la verificación consideramos también la «validación», entendida como el proceso por el cual se detectan pruebas que demuestran la precisión del sistema de APPCC (p.ej.: una prueba científica de los límites críticos).

begun. That morning the city had come under intense fire from warships in the bay and from bombers and from land forces ranged to the north and west. The attackers faced little resistance from ineptly organized militia units that received no direction from their leaders. More concerned about their personal safety than about the defence of the city, the military command had abandoned Málaga that afternoon, slipping away in cars without notifying anyone. Even before the departure of their leaders, many milicianos had already begun to rush to the highway leading east to Almería. Behind them came wave after wave of terror-stricken civilians.
Translation - Spanish Eran las 9 de la noche cuando abandonaron Valencia, y a esa hora ya había comenzado el asedio de los nacionales a Málaga. A lo largo de la mañana, los buques de guerra desde la bahía, los bombarderos desde el aire y las fuerzas de tierra situadas al norte y al oeste habían abierto fuego sobre la ciudad de forma intensa. Las milicias, desorganizadas y sin órdenes de sus líderes que pudieran seguir, apenas opusieron resistencia. Los integrantes del comando militar malagueño, más preocupados por su seguridad personal que por la defensa de la ciudad, se habían escabullido a primera hora de la tarde y se habían marchado en distintos coches sin informar a nadie. I am a graduated translator and interpreter by the University of Salamanca (Spain) and my working languages include English and German, Spanish being my native language. I am particularly interested and specialized in the following translation fields: humanities (literature, history, arts…), environment and ecology (renewable energy sources, energetic change and politics, energy technology, etc.), natural sciences (ecosystems, biology, zoology, climatology...), tourism, economy (marketing, advertising, corporate texts, macroeconomics...) and technical texts (air conditioning and heating technology, measurement devices, construction...).
