Swedish term or phrase: fermatering
Sorry, the context is not at all adequate, but I have very little myself.

This is from a list of words, many of them to do with meat and butchering, and some to do with hygiene and food processing in general.

I'm afraid it is way over my head... I turned down the job last week because it is too specialised for me, but the agency says no one else has time to re-proof it, and they are not sure it is correctly translated...!

Some terms I can clearly see are not, but this one has me floored, and delivery was literally yesterday!

Well, maybe my first (unexpressed) hunch was the better one. I now think it should be "fermenting". See http://www.wedlinydomowe.com/sausage-types/fermented-sausage

This makes sense when you go back to the Swedish link I posted and see that the equipment is described as "mogningsutrustning" used in the process of "fermatering".

Thanks - this really set me on the right track. (I think).
In the end I told the client that in a wordlist without context, it was impossible to give any reliable translation at all - I poked about in German, Swedish and English and was not certain about any of them, but you derserve the points!

I do not think it is a misprint. Most probably breweries borrowed the term from the music where it means pause - vila in Swedish. And good beer does need a rest in production process.
