I also found "proofer" and they describe it as a cabinet or chamber for proofing. Proofing oven was one term I found but I am certain you could use cabinet as the process is called proofing.

Asker: Thanks Roger. I've never heard of a proofing oven, so that is new. But now I am thinking that maybe this is a "proofing cabinet," ie. only part of the oven. Why isn't it called a dough raising cabinet, or something like that?
