darse de alta, estado de alta... sono espressioni che a volte ci viene difficile da rendere in italiano ;) in generale vuol dire iscriversi, essere iscritto, registrato, e el alta è il documento che certifica l'iscrizione, la registrazione, ecc.

Per il tuo caso, la RAE dice:
dar de ~.

1. loc. verb. Incluir objetos, herramientas, etc., en un inventario.

Cioè, che l'articolo non è registrato tra quelli che si stanno gestendo nel magazzino, magari è tra quelli già fuori produzione, non è incluso nell'inventario, non è attualmente in lavorazione, in vendita...
