In einem Text für Touristen wird ein Unternehmen mit Weinkellerei und Brennerei vorgestellt:

Kontext:
El grupo de empresas se completa con XY S.L., destilería dedicada a la elaboración de alcoholes de origen vínico orientados a la producción de brandys y venta de alcohol para la *alcoholización* de mistelas, vinos y vermut.

Alkoholisierung klingt ja nicht gerade erfreulich...
Oder vielleicht:
"...Verkauf von Alkohol für das Brennen von Mistelas, Weinen und Wermut..." (?)

Leider habe ich nicht viel Ahnung und bin in einer Tourismusbroschüre da hineingeraten.

Die zweite Sherry Variante die auf einem Fino basiert, ist der Amontillado. Bei diesen wird die Hefeschicht entweder durch erneutes aufspritten zum Absterben gebracht, oder man wartet ca. 10-15 Jahre bis diese von selbst stirbt.
