sí, por google se comprueba que la expresión se usa solamente en Baleares.

En el link se ve: establecer = eine Parzelle bestimmen (und bewirtschaften), establecedor = campesino arrendatario.

Wegerecht für die Pächter. Suena casi feudal, hoy seguramente ya no habrá "establecedores", pero el nombre del camino ha quedado.
