One possibility would be to use "field kitchen truck or trailer." Based on an internet search, "field kitchen truck" seems to be a well-accepted term - more than 6,000 hits. Images found in the search include some field kitchens on trailers, as well as many on trucks.

As I said before, I think it must mean that this new type of field kitchen constituted the body of either a trailer or a motorised vehicle; I don't know which. Maybe "vehicle-mounted" would be a solution. I don't think "mobile" will do. A horse-drawn carriage is mobile, but is not "carrozada".

No, "carrozado" doesn't mean "on wheels." It basically means "bodied," i.e., "having a body," in the sense of a car or truck (or trailer) body. "On wheels" here is an inference by Charles, with which I agree - that we must be talking about a field kitchen that is no longer packed on mules, but is now contained either inside the body of a truck or inside an enclosed trailer, each of which would be on wheels.

So "Carrozada" means "on wheels" does it? That was my main doubt in the question as I had already found field kitchen.

I think this term needs to be translated. The distinction in the ST is between the earlier field kitchen (cocina de campaña) which was "transportable sobre mulas" and the one introduced in 1971 which was "carrozada". The one carried by mules was itself mobile or portable, so that doesn't express the distinction. And indeed (as Robert has suggested) a field kitchen is by definition mobile or portable, so that's effectively a tautology.

I don't believe it means containerized, because of the date; I find it inconceivable that in 1971, when Franco was still alive, Spain had containerized field kitchens. Containerization came later, even in other countries. Given that "carrozar" means mounting a body on a motor vehicle, I think this refers to a motorized or trailer-mounted field kitchen. I'm not sure which: whether it was a food truck, a vehicle with a kitchen mounted on the back, or a trailer which could be towed by a vehicle. But I think it must mean that it had wheels and was transported by motor power rather than carried by mules.
