OK. I"m reposing my answer. It is an option, in fact, and I see no clear answer to this question, at least so far, given all the points that have been raised in the discussion.

In your context, it seems that "o saber" is used in the appositive sense to clarify the meaning of "conhecimento". An option would be to assume that "knowledge" alone is sufficient in English, that it doesn't need clarification.

I thought of 'mastery' for "conhecimento", because of the subsequent text that you posted, but it's not really the same.

We're often told that 'knowledge is power'. There's really no substitute for 'knowledge'. Any synonym would miss the full point, IMO.

There are lots of references to Foulcalt's thoughts on the subject of knowledge. I skimmed over the article at:
