Notes to answerer
Asker: It refers to the exhibition as a whole. A sort of summary on one of the walls - with many illustrations of the fields of her work.

teaching career

Explanation:
A more precise transation would be 'her work and accomplishments as a teacher', where -gjerning is elevated from just a job to something of a calling which I'm sure many teachers feel. Other professions where -gjerning is common, include doctors and priests (legegjerning, prestegjerning). In practical, day-to-day terms, though, we are referring to her teaching career - not the quality of her teaching.

The easiest and simplest solution might be the best here - 'Her work as a teacher'. We don't know for sure that the person would use the term 'lærergjerning', as if she was responding to some special calling. We also know little of her achievements and acomplishments, which are by no means given.

Notes to answerer
Asker: The person in question was a very humble person. I think it is very difficult to choose between all the options you all present to me here.

agree  Christine Andersen: There is sometimes (not always) a humble 'devotion to duty' in the 'gjerning' sense, while a 'career' may signal ambition. But it's complicated - both elements often come in both expressions. It's a life's work after all!
