J - Cut - Trimming a fillet removing both the nape and pinbones.
Had a look on some English pages re redfish and the way they listed for sale and J-cut seems to come up a lot, but I can't see where the "k" in the abbreviation comes from.
Is it possible that you can ask the client what the abbreviation stands for?
