Mettete a scaldare la panna ed il latte a bagnomaria e fatevi sciogliervi i confetti. Frullate, setacciate e unite gli albumi. Cuocete di nuovo il composto a bagnomaria, lasciandolo morbido. Aggiungete quindi della panna, aggiustate di sale e pepe e uniteci infine del caffè a vostro piacimento. Lasciate poi riposare per 5 minuti, coprendo con la pellicola.
Cuocete I Carbonari in abbondante acqua bollente salata, scolateli e mantecateli con burro e Parmigiano. Disponeteli infine nel piatto con un ** giro ** di spuma di confetti al caffè.

Explanation:
Intepreto que se debe hacer una forma circular con la espuma de confites, para decorar el plato. Dependiendo de la forma que le demos a este círculo, podremos llamarlo espiral (si tiene círculos concéntricos), un simple círculo, o incluso un copete, si tiene punta. ¡Habría que ver si tienes una foto! Aquí te dejo un enlace en el que dicen que decoran con un "giro" de crema chantilly y es un simple círculo, o incluso, borde (como en el link de Utilísima).
