All’interno della cooperativa esiste un sistema di rintracciabilità informatizzato di tutte singole partite di materia prima in ingresso e in uscita; gli addetti al controllo della qualità al momento della ricezione di una qualsiasi fornitura, controllano il sistema di trasporto e le condizioni della merce in arrivo, quindi avviene una prima verifica visiva sulla materia prima, successivamente vengono controllati i documenti che devono accompagnare la merce (fornitore, trasportatore, d.d.t., certificazione), infine vengono controllate tutte le caratteristiche merceologiche e di sicurezza alimentare, quali: peso, impurità, umidità, bianconature, volpature, germinature, slavature, presenza di muffe, odori sgradevoli e insetti vivi e/o morti, peso specifico, proteine e glutine.
