Il controllo delle infezioni è fortemente influenzato da diversi fattori: qualità delle barbabietole, meteo, *marcia di lavorazione*, ecc. quindi nel corso dei giorni si può osservare una certa variabilità.

Dalle ricerche che ho fatto in internet sembra che "marcia" faccia parte del gergo di settore (ho trovato anche "marcia bietole") ma non riesco a capire che cosa significhi. Grazie

màrcia s. f. [femm. sostantivato dell’agg. marcio] (non usato al plur.), pop. – Pus, materia suppurativa che si raccoglie nelle ferite infette, nelle piaghe, ecc.
Nel contesto che sta riportando, presumo si tratti di un sinonimo di marciume (anche marcia deriva dal verbo marcire) o di muffa. Tradurrei quindi “moisissure”. “Pourriture”, anche se pertinente mi sembra in questo caso meno appropriato. Credo che la lavorazione di cui è questione qui sia la trasformazione del prodotto.
