Italian term or phrase: Proto
Il proto, nel lavoro tipografico, indica il capo operaio che distribuisce le copie modello utilizzate poi dal compositore e che sorveglia l'esecuzione dei lavori.

He is a kind of foreman who provides the samples for the typesetting and supervises the activities.

English translation:Printer
Explanation:
The "proto" is the printer in the broad sense.
During the first printing of a new graphic, whatever the technique used (i.e. offset, rotogravure or flexo), reference is always made to the cromalin, or color target, provided by the customer or by the graphic agency. The "proto" (who can be the offset manager, the shift supervisor, foreman or simply the most experienced printer, etc.) is the person who is in charge of evaluating the colors on the printing machine and making the necessary adjustments so that the printed sheet is in line with the customer's cromalin.
Who is entrusted with the task of carrying out this verification depends on the specific operating procedure of each company.
For this reason I suggest using a generic term, such as "printer".

Composing-room overseer or clicker

Explanation:
My trusty six-language "Elsevier's Dictionary of the Printing and Allied Industries" gives it as either clicker, foreman or composing-room overseer/foreman. I think I'd be inclined to go for "composing-room overseer", particularly for a generalist audience.
