Citation from website shown below:
"Chiamata in passato centumcellae, fu abbandonata dopo l'arrivo dei saraceni. Quando fu nuovamente abitata le fu assegnato il nome di Civitas Vetula, ossia "città vecchia".
The etymology of this name will no doubt be described in other sources as well.

In response to Asker's notes: I think you are separating the "Ci" from the "Vita", creating the word "Life" in the middle, whereas the origin of the word according to this Italian source is "Civitas'" meaning town (or city). I hope this helps :)

Notes to answerer
Asker: Citta-Vecchia is Old Town but what is Ci- Vita-Vecchia?

Asker: Vita Vecchia is Old Life, correct?

Asker: I split the word CIVITA into two, which was a mistake. Sorry about that. I then read fbbest who found LATIN origins so I researched more at: The Online Etymology Dictionary Search: citizen OK from Latin civitatem (nominative civitas; in Late Latin sometimes citatem) originally "citizenship, condition or rights of a citizen, membership in the community," later "community of citizens, state, commonwealth" (used, for instance of the Gaulish tribes), from civis "townsman," The sense has been transferred from the inhabitants to the place. The Latin word for "city" was urbs, but a resident was civis. Civitas seems to have replaced urbs as Rome (the ultimate urbs) lost its prestige. Thank you kindly for your help.
