fresh pasta making
This is a recipe for making gluten-free fresh egg pasta sheets. This step comes after mixing all the ingredients together and kneading the dough for 5 minutes.
I think I get the gist, that when you roll it out it sort of springs back. May be wrong though. Don't know if simply "elastic" would suffice.
"L’impasto deve risultare tirato, liscio e nervoso."
Many thanks.

When you remove the dough from the fridge, knead until you have a smooth consistency. It should be like a slightly springy ball.
