Il Grüner Veltliner è la più coltivata, in grado di produrre vini bianchi con qualità organolettiche sorprendenti. Le altre uve a bacca bianca comprendono inoltre Furmint, Chardonnay (noto nella Stiria con il nome di Morillon), Muskateller (Moscato Bianco), Neuburger, Pinot Bianco, Pinot Grigio, Riesling (Renano e Italico), Sämling, Sauvignon, Traminer aromatico. Fra le uve a bacca nera il Pinot Nero, il Blaufränkisch, il Cabernet Sauvignon, il St. Laurent e lo Zweigelt.
