Viele davon werden reinsortig gekeltert, es gibt unzählige Vins de pays aus den dafür beliebten Sorten Chardonnay und Cabernet Sauvignon. Dies sieht man aber seitens der Behörden mit großer Sorge, weil es dem Appellations-Gedanken widerspricht. Um dem entgegen zu steuern, wurde 1996 das oben erwähnte Konzept von zwei Rebsorten eingeführt.
