Asker: Ciao Cristina, si tratta proprio di 'pürierte Menüs', il pollo in fricassea è ridotto a purea e poi viene geformt, ma non so come renderlo. Come ad esempio, le patate duchesse (Herzoginkartoffel), è purea di patate e poi viene conferita quella forma con la sac à poche
