The only term I am familiar with in German for "cross-country skiing" is "Langlauf(ski)" with a "Loipe" being the "cross-country skiing run".

"Backcountry skiing" is the more general generic term (see below).
"Off-piste" is a British term. I'd use it if "Geländefahren" is being used here in the more narrow sense, i.e. within the resort and vis à vis prepared runs (see below).
