agree  BrigitteHilgner: Die Betonung liegt auf "neuem" Wein, traditionellerweise auf dem eigenen, selbst-angebauten neuen Wein, aber das sieht man an vielen Orten nicht mehr so eng.

Explanation:
I think Edith's definition is too narrow nowadays. I've been to "Buschenschänken" in Austria that had nothing to do with wine making, e.g. somewhere on an alp. They serve local products (sausages, cheese, etc.), and are open during the summer and fall only.
