The ski area is interconnected with other ski areas and I think by "Ersteintritte" they mean the first "point of contact" as it were with the whole ski area, i.e. where the skier uses his/her ski pass for the first time that day.

Hard to say for sure without seeing the rest of the text, but
I'd understand as those visiting the ski area for the first time. I'd probably paraphrase and use a verbal construction in the first example:

A total of xxx lift passes were sold, xxx to people visiting the area for the first time.

and

This area accounts for around 50% of first-time visits.
