Quite an interesting situation. Johannes' arguments definitely support the use of "mountain" presentation for "Gebirgsdarstellung", yet, this term was not used by the manufacturer of the ECG software, although as a literal equivalent, it would really thrust itself upon any translator as first choice to look into.
More often than not, English is first with technical manuals, and other languages are translations. Is it possible that the English author chose an inadequate technical term ("waterfall"), and the German translator was smart enough to correct this? But still all distributors and copycats used "waterfall" in English, but "mountain" in German?
If so, you would have the unique chance to formulate the first technically correct English document about this type of Holter ECG analysis, Brent ;-))

  -> To be honest, I don't - never heard of "Gebirgsdarstellung" before ;-) But the first G-hit for "Gebirgsdarstellung" was this bilingual website with informative graphics. Hope you're well, too!
