Einschlagmasse für Torten-> die Masse, die zum Einschlagen (Eindecken, Umhüllen) eines Kuchens verwendet wird-> fondant, marzipan etc. ( passt hier wohl eher nicht!) 2. Ei-Einschlagmasse: Eimasse, die sich im Inneren eines Hühnereis befindet (im Gegensatz zur Schalenoberfläche) und die dann nach dem Einschlag (Aufschlagen der Schale) verarbeitet wird. Obwohl es seit langem bekannt ist bzw. angenommen wird, dass gerade der Kontakt des Eiinhaltes mit der Schalenoberfläche beim Einschlag für die Kontamination bedeutsam ist, wurde dieser Kontaminationsweg bislang experimentell nicht untersucht. http://www.qucosa.de/fileadmin/data/qucosa/documents/3699/35...
