organic milk Explanation: I believe this simply means the milk from cows that feed free-range, not from troughs or silo feed (these are the words of a city kid, bear in mind!) and not on animal products. This is what is typically called "organic milk" here. The #1 Google hit (link below) provides a bit of explanation. milk from cattle fed on hay Explanation: This does just seem to be mil from cattle fed in winter on hay rather than silage. Der Hauptvorteil der Heumilch ist der sehr niedrige Gehalt an Clostridien, auch Buttersäurebazillen genannt. Während in Heumilch unter 200 Sporen pro Liter vorkommen, findet man bei Verfütterung von Silage mit Buttersäuregärung bis zu 10.000 Sporen pro Liter Milch. In Grassilagen mit Buttersäuregärung können bis zu 1 Million Clostridien-Sporen pro Gramm vorkommen. Diese Sporen der Clostridien (Buttersäurebazillen) überstehen die Pasteurisierung der Milch und sind gefürchtete Schadkeime bei Schnitt- und Hartkäse, da sie Blähungen im Käse verursachen. Bei der Herstellung von Hart- und Schnittkäse aus Heumilch kann daher auf eine Zentrifugalentkeimung und Konservierungsmittel verzichtet werden. Außerdem ist bei Heumilch nur sehr selten ein Futtergeschmack festzustellen.
