neutral  IanW (X): I like "products" here, but have never heard of "raw-ripened sausages" (only 3 Google hits). Also, "boiling sausages" sound like the sausages are just very hot and "cooked sausages" could be any kind of sausages.

agree  Reinhard Wenzel: I also found many hits for "raw fermented sausages". There are may hits for "cooked sausages" in the specific meaning. Only Brühwurst seems to be a "boiled sausage" see German Wikipedia but I suppose that it also falls under "cooked sausage" in E

If I were you, I'd use "sausage specialities" for "Wurstwaren" (or just plain "sausages") and then use the German words followed by a brief explanation.

I've no idea what "Rohwurst" is (but would advise against "raw sausage"!), but my Langenscheidt defines the other two as:

Brühwurst: "sausage for heating in simmering water"
Kochwurst: "Wurst, deren Masse vor dem Einfüllen in den Darm gekocht wurde u. die vor dem Verzehr nochmals erhitzt wird."

agree  Anton Baer: Rather than 'products'. 'Delicatessen meats' may come in useful in another section of your text (cold hams, salami etc.)

neutral  Elizabeth Gahbler: just tried to add a note to my suggestion but it didn't work. I worked for a technical journal in the meat business for many years and these things are *actually* called that. But for a more general translation, your suggestion is fine!

Sorry, I misunderstood your question. I thought you were looking for a general term to cover all kinds of Wurst you can buy at the deli counter. In your case, either of the other suggestions should work fine. I also like HeinrichB's "delicatessen meats" as a general term for all kinds of sliced ready-to-eat meats.
