To my mind, "carving" is what we do to the turkey on Thanksgiving, not what is done after the animal is slaughtered and before it is packaged for sale. "Cutting" also doesn't sound quite industrial enough, although butchering produces "cuts" of meat.

neutral  Lancashireman: ‘Carving up’ might work but the two web refs are from non-technical sources. IMO ‘carving’ on its own suggests the meat has been cooked and is being served.
