stock for marinating (the vegetables) Explanation: Fond ist in der Küche "stock" (bekomme gerade die Knorr Stock Pot Werbung mit Gordon Ramsay nicht aus dem Kopf), und die Brühe wird zwar zum marinieren genutzt, aber m.E. sollte die Betonung auf Brühe bleiben, während eine typische Marinade ja üblicherweise mehr Gewürze und weniger Flüssigkeit enthält und es um die Übertragung der Gewürze geht. Hier scheint es so, dass die Brühe den Rettich nicht nur färbt, sondern durch die Hitze auch gart und eine Marinade würzt nur, hat aber nichts mit Garen zu tun... und abgesehen davon ist ja die Nutzung von Fonds eine beliebte Option, um einem Gericht oder einer Soße noch etwas mehr (Fleisch)Geschmack zu geben... ohne weiteren Kontext nehme ich an, dass Gemüse-Einlegefond = Fond zum Einlegen von Gemüse ist, sofern es sich um einen Gemüsefond=Gemüsebrühe handelt, dann natürlich "stock or vegetable stock for marinating" |
