Here, "coule" is the garment worn by a monk.

Charles Davis: Cucullus non facit monachum: the cowl does not make the monk (or friar; various versions). // Unsolicited historical footnotes are our speciality! It's in As You Like It btw. The FR version, "l'habit de fait pas le moine", goes back a long way too.
