In a book about Iran which I am reading, it says that Iranian meals often consist of rice mixed into about three kinds of food cooked in juice/gravy known as horosht.

Please write in Persian and give the correct translation.

It sounds as if the source was a misspelling. It is actually خورشت (pronounced /khoresht/), which is also sometimes spelled and pronounced خورش (/khoresh/). I don't think we can find any translation in English for major Iranian "khoreshts":
1- خورشت قورمه سبزی (consisted mainly of vegetables, beans, and meat)
2- خورشت قیمه (consisted mainly of split peas and meat)

There are other types as well.
