For what it is worth, I see water loaded humans all the time. They get that way, not necessarily by drinking too much water, but by taking serotonin reuptake inhibitors, a class of antidepressant. A common side effect is the so-called Syndrome of Inappropriate Anti-Diuretic Hormone (SIADH). We know they are water loaded because the serum sodium drops due to dilution from the water.
Thus, there are many ways that a rat can become water loaded. You can give too much water, by various means, or you can restrict excretion.
