Asker: well, let's make it clear, they are exotic also for Poles - the aim is to "make a trip into history when simple Polish villagers had traditional dishes"; and these peelings will be available in a chic restaurant with lots of French and Italian-sounding dishes. All that to provide an alternative to fast foods.

Explanation:
I'm not sure that peel is what you're looking for. There is a side dish that consists of deep fried potato skins though - perhaps this is what you mean? They are hollowed out potatoes, in your case maybe cut into strips or small pieces - hence the mini, or even bitesize?

Skin and peel are theoretically the same thing on a potato, although seeing potato peel on a menu would definitely turn me off! IMO, peel or peelings tend to be associated with waste that is destined for the garbage, whereas skin sounds much more appetising ;-)

when I was a fat kid my family would always go to this restaurant the next town over. The place had a signature dish called "frazzles". Frazzles were deep fried russet potato skins sliced semi thick and coated with layers of parmesan cheese. Each basket of frazzles were served with an extra creamy ranch dipping sauce...it was possibly the best snack I've ever tasted.
