pluck vísceras rojas Explanation: Aunque el uso de "pluck" varía, creo que la siguiente definición es fiable: "1. an abattoir term for the thoracic viscera plus the liver, after separation from the esophagus and the diaphragm. Includes the larynx, trachea, lungs, heart and liver, plus the spleen in sheep." Saunders Comprehensive Veterinary Dictionary, 3 ed http://medical-dictionary.thefreedictionary.com/pluck Es decir, que no incluye el esófago ni las vísceras (estómago e intestinos); de ahí que tu texto diga "with esophagus and viscera attached". Pues bien, creo que el mejor término que tenemos en español es "vísceras rojas", que se distinguen de las "verdes"; estas son, precisamente, los intestinos: "Se recomienda la separación de vísceras rojas (corazón, riñones, pulmones, médulas, tráqueas y estómagos de cerdo) de las vísceras llamadas verdes (intestinos, estómagos de las reses)." http://www.science.oas.org/oea_gtz/libros/embutidos/cap24.ht... La correspondencia no es exacta: las vísceras rojas, según esto, incluyen el estómago del cerdo, pero creo que el "pluck" no; en cambio, el "pluck" incluye el hígado, pero no está claro si este forma parte de las vísceras rojas (aunque sospecho que sí). Pero se acerca bastante, y no he encontrado otro término más exacto. -------------------------------------------------- Note added at 40 mins (2014-08-21 01:43:03 GMT) -------------------------------------------------- Las vísceras "verdes" se llaman a veces "blancas"; estas definiciones son de un "Norma venezolana: ganado porcino. Glosario": "3.8.11.1 Vísceras rojas: Es el conjunto de órganos torácicos y abdominales representados por el corazón, pulmones, hígado, páncreas, bazo y riñones. 3.8.11.2 Vísceras blancas: Es el conjunto de componentes del tracto digestivo representados por el estómago y los intestinos delgado y grueso." Por cierto, aquí se resuelve la duda sobre el hígado: sí que forma parte de las vísceras rojas, como también del "pluck". |
