The process of stirring and agitating cream in the process of making butter. Churning causes the fat globules in cream to clump together and separate from the liquid.

Definition:
Bućkanje je proces u proizvodnji maslac koji se dobija bućkanjem pavlake ili mlečne masti iz surutke. U tom postupku emulzija mlečne masti se pretvara u maslac tj. stvaraju se grudvice masnih kapljica. Kad grudvice maslaca dobiju oblik graška, bućkanje je završeno. Vreme bućkanja zavisi od zrelosti pavlake, temperature prostorije i godišnjeg doba.
Ranije se postupak izvodio u uskim, visokim drvenim posudama sa drvenim štapom koji se povlači gore-dole. Danas se bućkanje obavlja mehaničkim putem u velikim posudama, bućkalicama.

Bućkanje je proces u proizvodnji maslac koji se dobija bućkanjem pavlake ili mlečne masti iz surutke. U tom postupku emulzija mlečne masti se pretvara u maslac tj. stvaraju se grudvice masnih kapljica. Kad grudvice maslaca dobiju oblik graška, bućkanje je završeno.
