As duas sugestões significam, essencialmente, a mesma coisa. Acredito que esse texto trate do controle de alguma coisa (câmera nesse caso). O Pitch é um dos eixos de controle de aeronaves, responsável pela mobilidade da ponta do avião (ou semelhante) para cima e para baixo, mas podemos aplicar essa ideia ao movimento de uma câmera. Eu traduziria diferente para dois casos:

1. câmera: rotação e inclinação do eixo lateral da câmera
2. aeronave: rotação e arfagem da câmera.
