Hi, i am translating HACCP Based SOPs and i came across this term:

"Holding Hot and Cold Potentially Hazardous Foods."

Other example is "Take the internal temperature of food before placing it on a steam table or in a hot holding unit and at least every 2 hours thereafter"

What does "holding" mean in SOP? Thanks.

as to the meaning in context, i think:

- Holding here carries the sense of keeping/storing temporarily.

- it is not referring to holding in the physical sense, thus translating the two terms as Pemegangan dan unit pemegang would be inaccurate
