I do, however, see side pork and it looks like uncured bacon to me. Does anyone know if there's a difference or if I can just use the fresh side pork. Thanks. The side cut is just that - a slab that's on the side of the pig, while the belly usually means the side/underside cut. A side cut is meatier and is great for pancetta, especially if you're rolling it, while the belly cut has more waxy white fat and needs a long, cold smoke and more hanging time.
