goes in the right direction, but whether it's the right term....

Handles on ordinary scissors are straight, but these are both bent in the same direction at the back of the pivot so that the back of the blade travels along the surface of the plate under the pizza, while the curve of the handles takes them clear of the pizza while cutting it.

Explanation:
Unter "clearance" kann hier eigentlich nur der rückwärtige Abstand des Griffs der Schere von der Schittfläche (oder, was das gleiche ist, der Tischebene) gemeint sein. Das wird wahrscheinlich, wie David sagt, durch einen Knick vertikal nach oben entweder in den Scheideblättern oder in den beiden Griffen erreicht.
