I have googled the expression but am unable to determine its exact meaning. Could someone spell it out to me, please? :-)

"to go all vanilla" would suggest that a person is enforcing plainness, on <somethign>. Or it might be a racial reference, suggesting perhaps that a person of color is behaving in very "white" (caucasion) manner.

In english, vanilla is used to suggest the color white or plainness (even though vanilla is neither white nor plain!!). It's a reference to "vanilla ice cream" which in america is usually plain milk with little or no flavoring.
