English term or phrase: saute (v.) V.S stir-fry (v.)
Dear all,

Longman dictionary defines "saute" as "to cook something in a little hot oil or fat".... and "stir-fry" as "to cook small pieces of food quickly by moving them around continuously in very hot oil"

What is the crucial difference between the two?

The chef says "Oils with high smoke point are perfect for "stir-frying & sauteing" So I said مناسبة تماماً للقلي couldn't get the difference!

Explanation:
well, Stir-Fry: is continuously and consistantly stiring in very high flaming and temp in a non-stop motion. usually in a special pan that looks like a bowl.
Saute: does not have to be in continuous or consistant stiring and not in high flam or temp. it could be in a low-flam.

How about الطهي السريع بطريقة التشويح
also, I don't want you to miss the difference between both methods, it's not only the stiring, it's also the very high flaming that cause a special effect on the stired Veg. or meat.

I would use the word شوح، يشوح، تشويحاً حسب ما تتطلب الجملة

Asker: Thanks a lot. SO the main difference is in "stir" but how can we express that in Arabic?? or القلي here can go for both???

Asker: Can I say مناسب لجميع طرق القلي؟ I don't know!

Asker: or مناسب تماماً للقلي بأنواعه Thanks for inspiring me ;)

Asker: my ever lasting problem is I'm not sure if تشويح is classical Arabic. That is what "sear" means! Agh :(
