Danish term or phrase: olielage
I know that in English 'lage' can mean 'brine', but I'm at a loss as to what 'olielage' is. It is clearly something in which added to certain foodstuffs in tins etc. in order to preserve it. The document I'm translating relates to the proposed Danish tax on saturated fats. I guess it could be simply 'brine', which would make sense, or oil/brine.

En række produkter sælges i olielage (f.eks. tun), hvor olien ikke konsumeres. Den drænede vægt af et produkt i lage skal angives (nettovægt).

Thanks in advance for any help.

oil

Explanation:
brine is a "lage" based on salt and water, and a lage can also be based on vinegar (pickled).

When you have tuna in an "olielage" it is just in oil (as marked on the cans "Tuna in oil")

a layer of oil

Explanation:
In the old days much food was preserved a layer of clarified butter on top . I therefore find it likely that the same process can be done with oil.

Example sentence(s):
  • "Potted Shrimp" is a dish with clarified butter on top
