From a Catalan breakfast/brunch menu.

I gather that this is something like "dry-cured pork loin" or air-dried pork loin" but am not entirely sure. Also, am thrown by the use of "cap" here - are we talking about the tip of the loin cut or something? I have seen "neck-end" for "cap".... I need your advice!

So in English I found blade loin for the front part:
