Explanation:
The sausage casing is removed and the loose pieces are used. They are not chopped. They are broken up, as Ross stated in his answer. But for the name of the dish, it sounds nicer to say "crumbled".

Butifarra esparracada

En primer lugar hay que preparar la butifarra esparracada que será el relleno de los raviolones. ***Abrir las butifarras y freirlas en una sartén***. Cuando estén listas, añadir los camagrocs (reservar algunos para presentación)bien limpios y el caldo de pollo. En un mortero poner el ajo, las almendras y el perejil. Machacar bien. Diluir con el vino blanco y verter sobre la butifarra. Dejar evaporar todo el líquido y reservar.

"Chopped" sounds more elegant, but, like Pina, my wife (who's Catalan) seems to feel it's a less accurate description of what's involved.
