Hello,

This is an item on a menu:

"Filet de daurade, réduction orange carotte et déclinaison de fenouil"

I suppose that in this dish, there is cooked fennel and maybe raw fennel, or maybe the actual fennel alongside the green bits (which are edible by the way).

I would love to hear your suggestions about this, thank you.

In keeping with Mark's musical suggestion, this is sufficiently vague and non-committal to cover whatever a creative chef might do with it.

Personally, I favour the 'no-frills' explanatory version as far as menus are concerned; I think trying to fancy them up when translating into EN is beset with difficulties — not least the fact that 'poetic' in FR so easily sounds 'pretentious' in EN; and then again, as so often, leads one into the temptation of describing a dish with undesirable precision, when based on insufficient context.

Finally, I feel that one can afford to remain relatively succinct when it comes to 'mere' accompaniments, as distinct from the more important 'main element' of the dish.

Sadly, Asker, the one option you have chosen is not idiomatic in EN! 'variations on a them of fennel' is fine, or else it needs to be 'variations on fennel' — using 'of' here instead sounds really unnatural!

Thanks to Moira and Mark, I did like your suggestions, I'd already used "two-way" for something else on my menu, I just went with Tony's answer to keep it simple "variations of fennel" Merci !

or three ways... You'd have to know what it is exactly, but googling the phrase comes up with dishes with cooked and raw fennel or cooked fennel and fennel seeds.
