I'm not sure that "attività" needs to be construed as a physical workshop.
"Pensiamo alla nostra attività come un’autentica sartoria
dei mosaici" = "We like to think of what we do as (bespoke) tailoring in mosaic".

My sister is an architect, and I was actually just speaking to her about this word, and she says that at least in her circle, atelier would be the absolutely correct word for a more "artistic" type of workshop :)
